What is everyone doing for schools that request transcripts? It costs me $10 a copy, so I was thinking of sending myself a copy and then photocopying the official copy to send out to schools that request it (which seem to overwhelmingly be SLACs). Is that going to be enough or do they need the OFFICIALLY OFFICIAL (OMG) transcript?

Unless it says they need an official transcript, you can just send copies. Even when they do ask for an official transcript, they will often take a copy until you reach the offer phase.

I agree I would send unofficial (including ones you can print from the web) unless they ask for official.
Does anyone have any thoughts on the motivation for this, especially asking for undergraduate transcripts? My first impression was that it had a lot to do with the very big problem of individuals falsifying or in some way misrepresenting credentials. But I wonder whether they really are being looked at in a substantive way by SCs? If so, what might they be looking for?

I wonder if schools that request graduate transcripts got burned in the past. But I still think it's silly to request undergraduate transcripts - mainly because anyone applying for the job would have already had quite a bit of vetting. And, for some people who are grad students, undergraduate years were far far far in the past (I'm talking 15-20 years ago here....).

Last year I sent unofficial transcripts to the few places that asked for them. I didn't hear from anyone that they required the official transcript, but then again, I didn't get interviews at those places either.

I've never had any experiences with this so these are just my impressions (i.e., not based on any authority to comment:). It seems unlikely that you'd get disqualified at the interview stage due to having sent in an unofficial copy. It seems that if they really wanted to verify it, they could follow up.
Even if undergrad years were just 6-7 years earlier, it's not really clear what part of this information is of interest to the committees other than verifying that you did, indeed, finish college where you say you had.
