At what point do you decline competing offers- when you have accepted a verbally given job offer, or do you wait until you have the written offer in hand?
I'm (very) slightly paranoid about a disappearing offer, given the rumors that were floating around last year, and the continuing state of the economy.

I wouldn't turn down other offers until (a) your deadline to decide has run out or (b) you have a complete signed copy of the final contract.

Haven't you ever watched Judge Judy? Get it in writing!

This has nothing to do with the state of the economy or the job market. Unless you would not take the other jobs anyway, you should never decline other offers until you have the one you prefer in writing. (The only exception is if you have run out of time and the other offer expires in which case you're not necessarily declining per se, they are the ones not letting you contemplate it any longer. I had this happen when I was on the job market - no other job yet, but too early for me to commit - and a month after the deadline to decide, they came back to offer me the position again.)
