I was recently a discussant on a panel at a regional conference. Not having done so before, I wonder if there is a specific manner people reflect this on their CV? Do you even bother? Any advice?

I put that under service: professional (I also have a section for service: institutional)

That depends on what you did on the panel. Generally I would place it under professional service. But if for some reason the panel was organized such that you made a significant (say 10-20min) presentation of research you have done, then you could potentially place it under presentations.
