From my experience, I requested to meet with 4 interviewers and received 4 replies. Also, 2 other institutions requested to meet with me. It was pretty successful of a process for me.

Not on the job market yet, but I have a colleague who went to the ASA ES last year and ended up getting a pretty solid TT position with one of the schools they interviewed with. It may be rare, but I wouldn't say that the process is worthless.

Eh...ES is an opportunity to meet other scholars and tell them about your work. How could that be completely useless? This game is all about reputation after all.

The ASA employment service provides an opportunity to learn more about the position, insights that might strengthen your application and interest in pursuing the position.
In a market with so many strong applicants, it does not hurt your chances if one of the interviewers goes back and circulates your vita as someone with whom they were impressed.
As for supply and demand, there were far too many requests for interviews to be able to meet with everyone. In our case, the candidates who registered early and got their requests out early had greater odds of being scheduled.
But, we have reviewed the CV of everyone who requested an interview and have written to those whom we could not schedule.
